I recently hiked in the area and went up to Gridstone Caves via the Old Woman Stream Valley. To be honest, the top section of the valley above Grindstone Caves was the most scenic of this approach and so I would agree with Kobus' view that the Cataract Valley route would be a good option. The view from the Contour Path on top of Gibisila Ridge is mindblowing! From there it is a pretty sedate walk out back to camp via Marble Baths.
Of the variations in your map, the variation marked "1." would be quite scenic, only if to get a view up to the Old Woman Grinding Corn from lower down in the valley. I would still go further back up Gibisila Ridge for the aforementioned views though.
I hope to return to Injisuthi soon, so will admit to being rather jealous!

Thanks for the input guys,
Unfortunately my fiance managed to break her foot yesterday so this trip will have to be postponed for a month or two.
Will definitely take the advice and start out up cataract valley, then see how we feel coming back to add #3.
The Van Heyningen Pass loop looks very tempting, I am just concerned that it will be just too far to allow us some leisure time in between.
