Mini GT (April 2019) - Extension

We did the mini GT last year and descended via Twins Cave to Cathedral Peak Hotel.  This year I would like to extend this and exit via Monks Cowl (staring at Witsieshoek). 

Any suggestions with respect to caves to overnight in (between Twins Cave and Gray's Pass?).  How many days would add to the hike?  Looks like about another 30 km on the escarpment, so an additional 3 days including the descent to Monk's Cowl?  We are not crazy ultra-athletes by any stretch.

There are the Ndumeni Caves and Ndumeni Dome Caves (Lower/Upper Ndumeni Caves) as well as Roland's Cave by Organ Pipes Pass. Didima Cave is between there and Monk's Cowl and quite far from water. And Nkosazana Cave is near the head of Gray's Pass, though Nkosazana is often damp.
