Myself and a friend recently did a one-day ascent of the SE ridge, including the two climbing pitches to the top.
The climb is technical (not all G1's are equal
) and relatively bold, but the gear is pretty good and so is the rock.
If your aim is just to tag the main wall (and not the summit) then the ascent up the SE ridge itself to the start of the climb could be a cool adventure and quite similar to the Sterkhorn ascent just without the erosion slot showing you the route. Allow for quite a bit more time too. It took us 13hrs for the round trip, but the climbing consumed some of that time.
There is a fair amount traversing but for the most part you can just follow your nose as route is fairly obvious. See the route we followed below.
From the Monks office to the base of the wall is about 11.5km via the route you intended to follow, 1700m elevation difference.
There was one scramble that we went up but elected to rappel down (others had obviously rapped here to as there was tat there). If you are confident scrambling and down climbing you should be okay but you certainly would not want to 'dork it' at any point.
As per ghaznavid's post I think you can consider any route onto the top of Cathkin as climbing route requiring gear and ropes.
*EDIT: To add, once we left the contour path there was no water on route.

See my attachment, the green line is almost a straight shot up the 'grassy' ridge...and then stop as the cliff....the intention is not to climb the cliff, but rather just sit at the base of it.
Any thoughts?
I suppose i could just go as far up until its too sketchy to proceed.

If you make it to the base of Cathkin, you could make it a round trip by traversing the base of Cathkin and then come down the SE ridge. Friends have done this previously by accessing the Cathkin wall by traversing around the back (northern side) of Sterkhorn to access the neck/col between Cathkin. Red line was their approximate path. Apparently route finding was not a give away but was obviously doable.
